Is it healthy to put food directly on the engraved area?

Can I wash the board and the knives in the dishwasher?

Don't do that. Bamboo really hates the dishwasher. The heat and too much water can make it crack or swell after some time. Just wash it with hand and warm water, it cleans very easy anyway. The knives are stainless steel, but better to wash by hand too, to keep them shiny.

Do the drawers come out completely, or are they stuck?

They are not stuck. You can pull the drawers completely out if you want. This is actually a good feature because if some food crumbs fall inside the drawer slot, you can remove the drawer and clean it easily. Then you just slide them back in.
